Ginger beer is one of the traditional Corfu products, τσιτσιμπύρα (tsitsibira) in greek. Introduced by the British, this refreshing drink with a unique taste is still very widespread all overthe island and allegedly has numerous beneficial effects on health: is good for the stomach, it is a valuable remedy for diarrhea and nausea. Ginger is also good for those who have problems with arthritis and cholesterol! Here is the true recipe of Corfu ginger beer: Take a 2-liters plastic bottle (we do not recommend a glass bottle because ginger beer can be explosive!). Pour a cup of sugar and 1/4 teaspoon dry yeast and mix well. Add 2 tablespoons of ginger powder and juice of 1 lemon. Shake well to completely dissolve the sugar. Fill the bottle with water up to about 5 cm from the top edge, let it ferment for 24-48 hours in a warm place. The beer will begin producing its CO2! When you can no longer crush the bottle your tsitsibira will be ready! Let cool and filter it. You can refrigerate for about a month, but certainly will end sooner!!
